Yes, you can map your entire planning process with SAP ERP/S/4HANA and SAP IBP. In SAP IBP, you can choose to work with Excel front ends or, alternatively, with web interfaces (Fiori).
No, maintenance plans/work plans are not adjusted by IBP. This must be done directly in ERP/S/4HANA. In the future, SAP will offer a “demand object” that could then be adjusted by IBP.
Technically, the SAP CI-DS (Cloud Integration Data Services) tool is used, which is delivered with IBP. SAP also provides an add-on for SAP ERP and S/4HANA to extract data from these systems. Standard extractors are provided, but these can be extended.

The data is loaded into SAP IBP via CI-DS (Cloud Integration for Data Services). Each SAP IBP instance is also delivered with a CI-DS instance.
